While growing up in the South of France, Vanessa was always cooking and baking for her close ones. For her it was a way to express herself and delight others. Also, she always wanted to become an entrepreneur. After working in marketing in the prestige beauty industry for a few years, she went back to the South of France and completed an intensive pastry training program near her hometown in Marseille, in Aix-en-Provence, with Anna Notari from L’Atelier des Chefs. Coming back to New York with a dream, everything started when Vanessa enrolled in an Incubator program at Hot Bread Kitchen. From creating the recipes, doing the deliveries, partnering with new clients, and creating her own unique concept, Vanessa wanted to pursue her dream and worked endless hours.​

After 10 years servicing specialty coffee shops and corporate clients from a commercial kitchen, Pâtisserie Vanessa has taken a step forward by opening its first flagship store in the Upper East Side. Inspired by memories of the South of France, the Pâtisserie features Vanessa’s signature assortment and interior design.

Marseille and New York. The city of origin, and the city of destination. There is a celebration of what these two cities share, a kind of beauty that has an imperfection to it, almost a grittiness… a feeling of being real and vibrant. Each city is the perfect spot for the Epicurean, and so is Pâtisserie Vanessa. We are bathed in the colors of a Marseille sunset, surrounded by creations that are handmade by New York artisans, and delighted by the Poetry of the Pastry - its fresh-from-the-oven aroma, its crispy and creamy and smooth textures, and it’s other-worldly taste on the tongue.

Everything is made at the Pâtisserie, from scratch - from the boudoirs for the Charlotte and the Brioche of the Tropézienne, to the Bavaroise and Pastry Cream fillings, the raspberry jam… All with natural ingredients only. And then it’s all about delighting others and generosity. The authentic spirit of service, the luxury of simplicity.
